Our new recipes

Customers have often asked us about how do we decide and come up with new cake flavors. Our chefs typically create between 2 to 3 new cake recipes every year. And this is excluding the new Christmas and CNY cakes. Not all of these cakes will eventually turn out to be winners though. A couple of our new recipes, the Laksa cake for example, are deemed a tad too exotic for the common palate. But many have become personal favorites and even made it onto our staple list.

So, what are the typical considerations that go into the development of our new cake recipes? Foremost, we always attempt to do a flavor not done before. Our Mother’s Day cake in 2019, which we had incorporated ingredients such as birds’ nest and Chrysanthemum, is a prime example. Next, we wish to be able to excite and delight our loyal customers that have been supporting us for all these years. And finally, we like to create a flavor that customers of all ages are able to relate to.

For this Mother’s Day, our chefs have created a brand-new cake that we believe has satisfied all three of our considerations and likely a potential hit with mothers young and not-so-young. The two people behind Banana-Ra-MaMa, our Mother’s Day cake for 2023, are chef Frances and Woei Jie. They have decided to go with a banana-chocolate cake as this is something “local”, which will probably be agreeable to taste buds of all ages. But on their first attempt in developing the cake, they came to realize that with just banana and chocolate alone, the cake turned out to be too strong and very rich and thus, did not evoke a feminine flavor. As such, they decided to incorporate strawberries into the recipe, which help reduced the richness of the chocolate. And not only did the strawberries blend very well with the banana, the acidity of the strawberries also makes the overall flavor of the cake less sweet and more smoothing to the palate.  And why Banana-Ra-MaMa? It is a word-play on a popular British female pop trio in the 80s, who was listed in the Guinness World Records for achieving the world's highest number of chart entries by an all-female group. So, we deemed it quite apt to name our Mother’s Day cake this year in honor of the group.

Is our Banana-Ra-MaMa as good as we have made it sound? Don’t just take our words for it. Order yours to celebrate this Mother’s Day and find out for yourself!
