Repost: 21st Anniversary Letter

 

We posted below on our Facebook page on 28 May. But after our prior (bad) experience with the discontinuation of Facebook Notes (where all our prior years' anniversary letters were penned and which subsequently disappeared), we are reposting this here as a safeguard and also for those who may have missed reading it the first time around.....

 


The Patissier turns 21 in 5 days’ time (2nd June). Our anniversary is typically a very special day not just for us but also to our customers. However, celebration this year will be muted given the resurgence of the Covid-19 virus. We have decided to do away with our annual “1-Day-Only where customers get the absolute best discount on all our cakes” event so as to avoid crowding. We will definitely miss the buzz at the shop, which we have grown accustomed to, this coming anniversary day. And many of our customers too will probably be a tad disappointed with the event cancellation. But under current circumstance, it is the responsible thing to do.

The past year has been challenging to say the least. We continued to navigate the tricky path as Singapore continues to struggle with the Covid-19 pandemic. Significant changes have to be made to the way we work and how we conduct business, in view of safe distancing requirements and to keep our staff/customers safe. However, we consider ourselves very blessed despite the difficult times. Our business has remained resilient, which we largely attributed to our dedicated team and more importantly, the tremendous support from our customers. For this, we are extremely thankful. Our Passion Fruit Meringue, while not quite causing our website to crash (yet), has been selling out almost every day of the week since the start of the pandemic. Typical lead-time for ordering is now one week if customers want the cake on Fridays/Weekends. This signature cake of ours has always been the most popular amongst our offerings, yet we have never seen such level of demand pre-Covid. But we are not resting on our laurels. Our chefs have been keeping busy coming up with exciting and unique flavors to entice our customers’ palates. We have even added a Vegetable Cake to our staple of recipes! Our new Website and Online Ordering system also went “live” in January. The new integrated system (after the initial hiccups common with all new system roll-outs) now provides greater functionality and options to our online customers, which have exploded in numbers and now constitute 50% of our total revenue.

21 is normally associated with the coming of age. While the road towards our “adulthood” remains winding and littered with unknowns, we are forging ahead with cautious optimism. We will remain principled and steadfast in our beliefs, strive to stay relevant within the local confectionary scene, and continue to excite with our new flavors and creations. We are also counting on the continual support from you - our band of loyal customers. And we look forward to penning our next anniversary letter to you in 2022!

Our new recipes

Customers have often asked us about how do we decide and come up with new cake flavors. Our chefs typically create between 2 to 3 new cake recipes every year. And this is excluding the new Christmas and CNY cakes. Not all of these cakes will eventually turn out to be winners though. A couple of our new recipes, the Laksa cake for example, are deemed a tad too exotic for the common palate. But many have become personal favorites and even made it onto our staple list. So, what are the typical considerations that go into the development of our new cake recipes? Foremost, we always attempt to do a flavor not done before. Our Mother’s Day cake in 2019, which we had incorporated ingredients such as birds’ nest and Chrysanthemum, is a prime example. Next, we wish to be able to excite and delight our loyal customers that have been supporting us for all these years. The Big Move ...

    After spending almost 2 decades at our current location, we are finally moving out of Mohd Sultan Road. This is not an easy decision, especially when we have become quite the establishment where we are at. But with our lease coming to an end this year, we have been liaising with our landlord on renewal matters since 3 rd quarter of last year. And after almost 18 years and 5 lease renewals later, we did not expect the “take it or leave it” ultimatum that was handed down to us. To be fair, the relationship with our landlord has always been amicable for the past years. So the latest renewal negotiation (or the lack thereof) really took us by surprise. We always pay our rental on time and have been quite the model tenant. But we reckon they must have their rationale and well, it is what it is.
