Long time no see!

We often do get questions from our customers on why a certain cake has not been available for such a long time, or why can't we add a particular cake to our list of regular cakes to be available monthly. 

We have over 100 cake recipes. And we add between 3 - 5 new recipes into our list every year.  So it is impossible for us to produce all the cakes in our recipe book during the course of the year. We typically have between 13 - 15 of what we termed as "staples", i.e. standard cake flavors that are available every month. These are the likes of our Meringues, Double Chocolate Pralines, Chocolate Fudge, Tiramisu, Empress Dowager, Citrine Rhapsody etc. And we top this off with 2 - 3 "rotating" flavors, which consist of cakes that are not "popular" enough to make our staple list. Examples of "rotational cakes" are our Green Tea Bavarian, Pistachio Chestnut, The Ribena, Ho-Ho-Horlicks... the list goes on. The rotational cakes will stay on our menu for one or at most two months and then be replaced by other rotating flavors thereafter. But we have customers who are fans of certain rotational cakes and are always lobbying for their favorites to make a return to our menu. Much as we hope to please everyone, it is impossible to do so for production reason - we need to produce/sell a minimum number of cakes of each flavor for it to make economical sense to order the ingredients needed to make those flavors. Moreover, we also want to showcase as many of our rotational flavors as possible. So it is a case of too many cake options but too few months in a year.

Despite our best efforts to try and bring back as many of our cake recipes as possible, there are some cakes that have not seen the light of day for many years. And not because they are bad or unpopular. But simply because we have too many recipes. The Earl Chocolatte, which is making a return this September, is a good example. Previously known as UFO, this unique combination of Coffee and Earl Grey mousse with Cocoa Beans and a light sponge has finally made our cake list for the first time in almost 6 years! 

So please look out for your favorite rotational cakes and order them whenever they return. Cos it may be awhile yet before they make another appearance!

Our new recipes

Customers have often asked us about how do we decide and come up with new cake flavors. Our chefs typically create between 2 to 3 new cake recipes every year. And this is excluding the new Christmas and CNY cakes. Not all of these cakes will eventually turn out to be winners though. A couple of our new recipes, the Laksa cake for example, are deemed a tad too exotic for the common palate. But many have become personal favorites and even made it onto our staple list. So, what are the typical considerations that go into the development of our new cake recipes? Foremost, we always attempt to do a flavor not done before. Our Mother’s Day cake in 2019, which we had incorporated ingredients such as birds’ nest and Chrysanthemum, is a prime example. Next, we wish to be able to excite and delight our loyal customers that have been supporting us for all these years. The Big Move ...

    After spending almost 2 decades at our current location, we are finally moving out of Mohd Sultan Road. This is not an easy decision, especially when we have become quite the establishment where we are at. But with our lease coming to an end this year, we have been liaising with our landlord on renewal matters since 3 rd quarter of last year. And after almost 18 years and 5 lease renewals later, we did not expect the “take it or leave it” ultimatum that was handed down to us. To be fair, the relationship with our landlord has always been amicable for the past years. So the latest renewal negotiation (or the lack thereof) really took us by surprise. We always pay our rental on time and have been quite the model tenant. But we reckon they must have their rationale and well, it is what it is.
